Anti-inflammatory & Nutrient-Dense This soothing soup leverages the power of anti-inflammatory turmeric and garlic, which have natural antimicrobial properties, while packing a micronutrient punch.
Ingredients:
1 tbsp coconut or olive oil
1 onion, chopped
3 cloves garlic, minced
1 tbsp fresh ginger, grated
1 tbsp fresh turmeric, grated (or 1 tsp ground)
1 carrot, diced (Vitamin A)
1 cup chopped pumpkin or butternut squash (Vitamin A)
1 cup red lentils (protein, iron, zinc)
4 cups vegetable or chicken broth
1 can (400ml) coconut milk
Juice of 1 lime
Fresh cilantro for garnish
Instructions:
1.Stir in coconut milk and lime juice. Heat through. Garnish with cilantro.
2.In a large pot, heat oil and sauté onion until soft. Add garlic, ginger, and turmeric, cooking for 1
minute until fragrant.
3.Add carrot, pumpkin, and lentils. Stir to coat in the spices.
4.Pour in the broth and bring to a boil. Reduce heat, cover, and simmer for 20-25 minutes until lentils and vegetables are soft.
