Ingredients:
– 1 cup quinoa, rinsed and drained
– 2 cups water
– 2 medium beets, peeled and diced
– 1/4 cup chopped fresh parsley
– 1/4 cup chopped walnuts (optional)
– 2 tbsp olive oil
– 1 tbsp lemon juice
– Salt and pepper to taste
Instructions:
1. Cook quinoa in water (about 15-20 mins).
2. Steam beets until tender (20-25 mins).
3. Mix cooked quinoa, beets, parsley, and walnuts.
